Jollof Rice Recipe

A spicy West African rice dish made with tomatoes, onions, and spices.

  1. Rinse the rice in a fine mesh sieve and set aside.
  2. Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the tomato and cook for an additional 2 minutes. Stir in the tomato sauce, chicken broth, paprika, cumin, cayenne pepper, thyme, and salt.
  4. Bring the mixture to a boil, then add the rice and stir to combine. Reduce the heat to low, cover the saucepan, and simmer for 20 minutes.
  5. Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
  6. Fluff the rice with a fork and serve hot.
