Jollof Rice Recipe
A spicy West African rice dish made with tomatoes, onions, and spices.
Ingredients
- 1 cup long grain rice
- 1 cup water
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 small tomato, diced
- 1/2 cup tomato sauce
- 1/2 cup chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon thyme
- 1/4 teaspoon salt
Instructions
- Rinse the rice in a fine mesh sieve and set aside.
- Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the tomato and cook for an additional 2 minutes. Stir in the tomato sauce, chicken broth, paprika, cumin, cayenne pepper, thyme, and salt.
- Bring the mixture to a boil, then add the rice and stir to combine. Reduce the heat to low, cover the saucepan, and simmer for 20 minutes.
- Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and serve hot.
