Eguisi Soup Recipe
Eguisi soup is a traditional Nigerian dish made with ground egusi seeds and various vegetables. It is rich,
flavorful, and perfect for a hearty meal on a cold day. This recipe will show you how to make it at home.
Ingredients:
- 1 cup ground egusi seeds
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 cup diced tomatoes
- 1 cup diced okra
- 1 cup diced yams
- 1 cup diced chicken breast
- 4 cups chicken broth
- 1 tsp salt
- 1 tsp black pepper
Instructions:
- In a large pot, heat a small amount of oil over medium heat. Add the onions, bell peppers, and tomatoes and
sauté for 5-7 minutes, or until the onions are translucent.
- Add the okra, yams, and diced chicken to the pot and cook for an additional 5 minutes.
- Stir in the ground egusi seeds and cook for 2-3 minutes, or until the seeds are lightly toasted.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low and simmer for 45 minutes.
- Season with salt and black pepper to taste. Serve hot with your choice of rice or bread.
