Ingredients
- 1 cup egusi seeds
- 2 tablespoons ground crayfish
- 1 small onion, finely chopped
- 2 tablespoons tomato paste
- 1 teaspoon pepper flakes
- 1/2 cup palm oil
- 1 pound beef or chicken, cut into small pieces
- 6 cups water
- 1 cup chopped greens (such as spinach or kale)
Instructions

In a small pan, toast the egusi seeds over medium heat until fragrant and lightly browned, stirring
constantly. Remove from heat and let cool.
Grind the toasted seeds in a spice grinder or blender until finely ground.

In a large pot, heat the palm oil over medium heat. Add the chopped onions and sauté until translucent.
Add the ground egusi, crayfish, tomato paste, and pepper flakes to the pot and cook, stirring
constantly, for 2-3 minutes.

Add the beef or chicken to the pot and cook for an additional 5 minutes, until the meat is browned.
Add the water and bring to a boil. Reduce heat to low and simmer for 45 minutes, stirring occasionally.

Add the chopped greens to the pot and cook for an additional 10 minutes, until the vegetables are
tender.
Serve hot with rice or bread.
